The oldest co-op in the country, CADEFIHUILA, has prepared this great coffee. Sugarcane is a method of natural decapitation. The process begins with fermentation of molasses to produce ethanol. Then ethanol is mixed with vinegar acid to give ethyl acetate. I
t doesn’t sound very good, but it’s a completely natural compound, it is found in fruits, cereals, sugarcane. The green coffee beans are then steamed, soaked, swollen and then washed with ethyl acetate to dissolve and remove caffeine.
Then the beans are washed again abundantly with water, steam and finally dried until they reach their original moisture content.
